About Four & Twenty Blackbirds Brooklyn Pie Shop
Although there are plenty of bakeries in New York that make and sell pies, sisters Melissa and Emily Elsen decided to open a pie shop with a couple of big differences from the others.
First, the sisters were dedicated to creating hand-made pies that use fresh ingredients and fruit that was sourced from local orchards and vendors. This elevated the flavors to a whole new level.
Second, they noticed that none of the bakeries made their pies the showcase of their shops. Their pies were usually something sold to be enjoyed after a full meal. Or, they baked pies that were meant to be eaten and enjoyed elsewhere. Melissa and Ellen’s bakery would not only treat customers to amazing pie, but also enhance the experience of eating it. To do so, they added a dining area to their shop so customers could order a slice of fresh-baked pie, have a set and enjoy it then-and-there with a hot cup of coffee.
Four & Twenty Blackbird pie shop opened its doors in 2009. Its combination of delicious pies and a relaxed atmosphere in which to enjoy them proved popular with their Brooklyn neighbors. As their fan base grew, so did their bakery enterprise. In addition to their shop in Gowanus, the sisters also opened the Four & Twenty Blackbirds Pie Counter & Bar in nearby Prospect Park and a large production kitchen to create pies for catering, wholesale distribution and online orders that can be delivered locally or shipped nationally.
Baking Pie at Home
The Four & Twenty Blackbirds team not only wants their customers to enjoy their pies at their Brooklyn shop, they also want them to try baking their own pies at home. That’s why they published the Four & Twenty Blackbirds Pie Book. Filled with their recipes for distinctly delicious pies, the book encourages everyone to give pie making a try in their own kitchens.
